GREAT BRITISH PIZZA MADE FROM GREAT BRITISH INGREDIENTS
The stockists we use are very important to us. We use British, seasonal produce as much as we can. Our sauce is homemade and slow-cooked, our dough is made to our exact recipe (it took us three months to perfect it so it creates a thin, crispy, light pizza) using British 00 flour and our buffalo mozzarella hails from the south of England.
Our British charcuterie is supplied by the wonderful Cannon & Cannon in Borough Market, who source lovingly-cured meats from all over the UK. We also seek out local Kentish producers, making small batch cured meats. Chorizo, fennel salami, nduja salami and morcilla are just some of the meaty slices of goodness that top our pizzas.
Our apple juices are English and are actually made just down the road from Kentish apples, by the wonderful Little Stour Orchard, who Taste of Kent award winners.
We’ve found a great local supplier of ice cream, Taywell, who create delicious ice creams and sorbets from predominantly local ingredients. They share the same food philosophies as us, so we’re really proud to work with them.
The coffee we use – and it’s by far the best we’ve tasted on our culinary travels – is roasted by Climpson & Sons in Hackney, London. It’s spoilt our coffee drinking, as no other coffee comes close.
Our ham and sausages come from Chandler & Dunn in Kent.
